Microwave Mexican Chicken

Ingredients: 4 boneless, skinless chicken breasts
1 jar Chi Chi's mild Mexican salsa
(or favorite brand)
mozarella cheese


vermecelli

Directions:
Start water for noddles. When almost boiling, nuke chicken in a glass pie
chicken covered with waxed paper for 3 to 5 min.
Drain "water". Top each piece with mozarella..
thin or thick slice as desired. Dump salsa on top.
Return to microwave and nuke until chicken is done
approx 3 to 5 min. Divide vermecelli into 4 portions
top with a chicken breast and salsa. Obviously this
recipe can be adjusted to serve 1 or 2 people....
plenty of time left to quilt

Ingredients: 2 Pastry shells, pre made is okay !
Fresh Spinach
Mushrooms
Italian Sauages, in slices
Mozzerella Cheese
Romano Cheese
Parmesan Cheese
Pizza Sauce
Tomato, slices
Basil
Egg Yolk
Directions:
Starting with the pastry shells, make your own or in a rush, I buy the ones in the dairy section !
You will put one in a deep dish for baking.
Next, layer these as follows : Fresh Spinach, Fresh Mushrooms, Italian sauages, Mozerella cheese,Romano Cheese and Parmesan Cheese.
Add the other Pastry Shell on top and spread with the Pizza Sauce, add some of the Mozzerella Cheese on top, sliced Tomato and sprinkle with the Basil ! Put alittle egg yolk around the edges to keep from burning and for better edges !
Bake at 400 degrees for 30 minutes

Serve warm to Hot and Enjoy !!!!

Note : I use lots of cheeses and ingred. To the point of stuffing, so when it bakes down, there's still plenty inside foe eating !

Spinach Plus

Ingredients: 1 deep dish pie shell (slightly golden) 1 large onion (sliced medium pieces) 1 large green bell pepper (seeded and sliced into strips) 1 clove of garlic (peeled and crushed) 1 large bag frozen spinach (16ounces) 1 cup of shredded cheddar cheese 1 cup of mozzarella cheese (small pieces) 4 ounces grated Romano cheese 3 egges (beat well) 4 tbls Olive Oil
Directions:
Preheat oven or toaster oven 400* saute' onion,pepper,garlic, in olive oil until onion is golden--add frozen spinach and season to your own taste eg.salt,pepper and herbs--medium heat until spinach is hot--stir well--lower heat temp. and add cheeses--stir just until blended---fill pie shell---pour beaten eggs into mixture in small amounts making sure egg is blended with spinach--carefully pour any left-over egg on top--cook at 350* until crust is golden brown ENJOY!!

Monster Cookies

Ingredients: 6 eggs
2 1/4 cups light brown sugar
2 cups white sugar
1 1/2 teaspoon vanilla
1 1/2 teaspoon light corn syrup
4 teaspoons baking soda
1 cup butter (NOT margarine)
2 cups peanut butter
9 cups uncooked rolled oats
1 cup semi-sweet chocolate chips
1 cup M&M Candies
Directions:
In a large bowl, mix all ingredients in order listed. Drop dough from well-rounded tablespoon (or use small ice cream scoop) onto ungreased cookie sheet. Place only 6 cookies on baking sheet. Bake at 350° for 12 minutes. Do not overbake. Allow to cool on sheet for 1 minute to avoid breaking cookies. These freeze well.

Makes 6 dozen

Zucchini Stir - Fry

Ingredients: 4 slices bacon
3 C. diced unpeeled zucchini
1/2 C. chopped green pepper
1/2 C. chopped onion
1 carrot, grated
1/2 C. sliced celery
2 T. cider vinegar
2 T. sugar
2 T. soy sauce
1 tomato, chopped
Directions:
Cook bacon until crisp; remove from pan and set aside.
Add all vegetables except tomato to fat in skillet and stir fry for 5-7 minutes over High heat.
Add vinegar, sugar and soy sauce; stir well.
Add tomato and cook 1-2 minutes longer.
Crumble bacon and sprinkle on top.
Serve over hot rice.

Serves 4


Very versatile-add any other veggies you like or leave out the ones you don't. Even my zucchini-hating kids like this!

Breakfast Pizza

Ingredients: 1 can crescent rolls (8 rolls)
1 lb bulk sausage
1 C frozen hashbrowns
1 C grated cheddar cheese
5 eggs
1/4 C milk
salt, pepper, parmesan cheese
diced onions, optional
Directions:
Press rolls into pizza pan; brown sausage, spread on rolls. Top with hash browns and shredded cheese (and onions if using them). Mix eggs and milk, pour over pizza; top with salt, pepper and parmesan cheese.
Bake 25 - 30 minutes at 350.

Make Ahead Mushroom & Egg Caserole

Ingredients: 1 can cream mushroom soup
3 T sherry or milk
1 1/2 C shredded cheddar or Jack cheese
18 eggs combined with 2 T milk
1 tsp parsley flakes
1/2 tsp dill week
1/8 tsp pepper
4 T butter
1/4 lb sliced fresh mushrooms
1/4 C chopped green onion
paprika
Directions:
Combine soup and sherry or milk and heat. Cook mushrooms and onions slightly in butter, add egg mixture, lift gently and cook just til softly set. Spoon 1/2 mixture into greased baking dish (cake pan--9x13 or so), add 1/2 soup mixture, 1/2 cheese; repeat layers. Sprinkle with paprika. Can be prepared the nite before and refrigerated. Bake at 300 for 30 minutes, OR for 1 hour if refrigerated.

Giant Apple Pancake

Ingredients: Filling:
4 medium cooking apples (unpeeled)
3 tablespoons butter
3 tablespoons honey
3/4 teaspoons cinnamon

Pancake:
4 eggs
3/4 cup milk
3/4 cup all purpose flour
1/2 teaspoon salt
4 teaspoons butter
1 teaspoon sugar

Directions:
Filling:
Core and slice apples. In large heavy skillet or saucepan over medium heat. Mix together butter, honey and cinnamon. When sauce starts to thicken, stir in apples, toss to coat well. Cover and cook, stirring occasionally: for about 5 minutes or until apples are tender.

Pancake:
In a large bowl, beat eggs. Beat in milk, flour and salt. In large ovenproof skillet, melt butter. Pour in batter and immediately place in a 450 F. oven for 10 minutes; pancake should be brown around the edges and set in the center. If not done, lower heat to 350 F. and return to oven for 5 minutes longer.
Slide pancake onto serving plate, arrange apples over half and fold the other half over. Sprinkle top with icing sugar.
Makes 3 to 4 servings.

EGGS PORTUGAL

Ingredients: 4 eggs
8 slices crustless white bread
3/4 pound grated cheese
1 1/2 pounds skinless sausage links
2 1/2 cups milk
3/4 Tablespoon mustard
10 3/4 ounce can cream of mushroom soup
1/4 cup dry vermouth or white wine
Directions:
Night before,cut links into thirds and brown. Cube bread and put into 9x13 inch casserole. Cover with cheese and sausage. Mix eggs, milk, and mustard, and pour over casserole. Cover with plastic wrap and refrigerate.

To cook, bring casserole to room temp. Blend soup and wine and pour over casserole. Bake at 300 degrees for 1 1/2 hours or 350 degrees for 1 hour. Done when shaken like jello.

For a different twist use Chorizo sausage instead of regular breakfast links, it adds a bit more zip from the spices.

Chicken & Stuffing Bake

Sugar Free Jello Treat

one pound of cottage cheese.

No Bake Chocolate Cookies

Ingredients: 2 cups white sugar
1 stick margarine
3 tablespoons unsweetened cocoa powder
1/2 cup milk

1/2 cup peanut butter
1 teaspoon vanilla

3 cups uncooked oats
Directions:
In a medium saucepan, mix sugar, margarine, cocoa, and milk. Bring to a boil over medium heat, stirring constantly.

Remove from heat and let cool for 5 minutes.

Add peanut butter and vanilla. Mix well.

Add oats and stir just until moistened.

Drop by tablespoon onto waxed paper. Cool. Enjoy!

Pig Pickling or Mandarin Orange Cake

Ingredients: 1 pkg. yellow cake mix
1 (11 oz.) can mandarin oranges
1/2 cup oil
4 eggs
1 cup walnuts
Frosting
1 (3 oz.) pkg. instant vanilla pudding mix
1 (9 oz.) carton Cool Whip
1 large can crushed pineapple, drained
Directions:
Mix cake mix, oranges with juice and oil. Add 1 egg at a time and then nuts. Pour into greased and floured cake pans. Bake at 325 for 30-45 mins.
Frosting:
Mix pudding with Cool Whip. Add pineapple but not all the juice. Frost cooled cake. Refrigerate. ENJOY!!!

Note: I use all the juice.

Twinkie Desert or Good Slop

Ingredients: 1 box of Twinkie Snack Cakes
2 small or 1 large box of Vanilla or chocolate pudding . (I use 1 of each and swirl them.)
Med size cool whip
6-8 Heath bars
Milk to prepare pudding
Directions:
Cut Twinkies in half and lay in bottom of 9x12 pan. (If they all don't fit in eat the rest!) Prepare pudding according to package directions. Spread pudding over top of Twinkies.I like to make one package each of chocolate and Vanilla pudding and swirl them. Spread cool whip over pudding. Top with crushed Heath bars. They break up better if frozen first. Keep desert in refrigeror. This was a recipe I got from my Mother. My youngest son told me it was "Good Slop" so it was given this new name!

fried zucchini blossoms

Ingredients: 30 zucchini (or yellow squash, or pumpkin) blossom buds (pick only the ones on stems that are about to open "tomorrow". the ones on stems are "male flowers" and do not produce fruit)
3 eggs
1 Tablespoon grated Parmesan
1 clove garlic, minced
1 Tablespoon chopped parsley
1/4 tsp. salt
1/2 tsp. baking powder
1/2 Cup flour
2 Tablespoons milk or water


Directions:
Rinse off blossoms and pat dry. Combine eggs, cheeze, milk or water, parsley and garlic. Whisk well. Add the rest of the ingredients that have already been mixed together. Immediatly mix blossom buds gently in batter (in groups of 1/3 at a time), and drop with tongs into a fry pan with 2.5 - 3" of hot oil (I use liquid veg. oil). Turn when brown, and remove when brown on both sides, to a papertowel covered plate.

These are real treats!

saucijzenbroodjes(Hot bread)

Ingredients: 10 slices of puff-paste
20 shakes of tabasco
3 teaspoons of sambal( it´s crushed red pepers)
4 toes of garlic crushed(if you don´t have to kiss)
1 egg
1 little bag of pork meat herbs
1 pound of minced meat

1 egg

Directions:
All right here we go...
first preheat your oven on 225 c
You put the meat,tabasco,sambal,garlic,egg,porkmeat herbs
together mix it with your hands.
Then divide in 10 parts and put in on the puff-paste.
You have to make a envelope of it that the meat is inside.
Then you take the other egg and stirr it with some salt,and then put
it on each top of the saucijzenbroodje.
Put it in the oven for about 25 min and watch out when you eat because
you can eat your fingers .

Cheese-Egg Casserole

Ingredients: 1 cup Butter, melted
1 cup Flour
2 teaspoons Baking Powder
12 eggs, mixed
Salt to taste
2 pounds Cottage Cheese
1 pound Monterey Jack Cheese, grated
Any one or combination of:
Chopped green chilies
Green or black olives, sliced
Mushrooms, sliced
Artichoke hearts
Onion, chopped
Directions:
Mix well the butter, flour, baking powder and eggs.
Add the salt, cottage cheese, grated cheese and choice of other ingredients.
Pour into a 9" X 13" casserole dish and bake at 350 for one hour.

Ricotta Pie

Ingredients: 3 pounds ricotta cheese
2 cups sugar
6 eggs
1 teaspoon lemon extract
1 cup cooked pastina pasta
1 greased 9"x13" glass baking dish
Directions:
Combine all ingredients and mix well. Pour into the pan and bake at 325 degrees for two (2) hours. Top must be firm and will turn golden brown. Let cool and refridgerate like you would a cheese cake.
ENJOY! It's fast to make and easy too....just right for busy quilters!

Pineapple Chicken

Ingredients: We really like this recipe. Even DS#2 who is very picky. I use the drained pineapple juice instead of the orange juice and use a spicy barbecue sauce. If you like a lot of sauce, double the first 5 ingredients.

1/2 c barbecue sauce
1/2 c orange juice
1/4 c packed brown sugar
2 T vegetable oil
2 T all purpose flour
1/4 t salt (optional)
4 c cubed cooked chicken
2 cans (5 1/2 ounces each) pineapple chunks, drained
1 can (8 ounces) sliked water chestnuts, drained
1 1/2 t ground ginder
Hot cooked rice

Directions:
In a large saucepan, combine the first six ingredients until smooth. Bring to a boil; reduce heat and simmer for two minutes, stirring occasionally. Add the chincen, pineapple, water chestnuts and ginger; cover and simmer 10 minutes. Serve over rice. 4 servings

Mom's Salmon Casserole

Ingredients: 2 16 oz. cans of good quality red salmon
3 cups whole milk (approx.)
2 small minced cooking onions
1/2 cup butter
1/2 cup flour
1 tsp. salt
dash of cayenne pepper
1 cup of fresh sliced cremini mushrooms
1/2 cup of sliced water chestnuts
1 tsp. dry mustard
1 lb. grated old white cheddar cheese
6 cups cooked broccoli florets or asparagus tips

Paprika and parsley to dress the top

Directions:
Drain salmon and pour liquid into a 4 cup measure
Add enough milk to measure 3 1/2 cups.
Chunk the salmon.
Melt butter and add flour, salt, cayenne & mustard.
Add milk mixture and stir over medium heat till thickened.
Stir in 2 cups of cheese
Place broccoli in bottom of large buttered casserole.
Arrange salmon, onion, mushrooms, & water chestnuts over it.
Pour sauce over all, moving the ingredients aside with the
tip of a knife to allow the sauce to seep underneath.
Sprinkle with remaining cheese, paprika and parsley.
Bake at 400 for 25-30 min. until bubbly. Let rest for ten minutes before serving.
Serves 8-10

Chinese Chicken Coleslaw

Ingredients: 1 head cabbage, cut up
4 chicken breasts, cooked and cubed
4 pkgs. Ramen chicken noodles
1/2 cup oil
1/2 cup vinegar
pepper to taste
Directions:
Mix oil, vinegar, pepper and seasoning packets from noodles. Break up noodles and place in boiling water for 1 minute. Drain immediately and rinse in cold water. Mix all ingredients together and chill. Enjoy!!

Hand Cream

Ingredients: 400 gram jar of vitamin E cream
400 gram jar of vitamin A cream
60 ml bottle of baby oil
50 grams of vasoline
15 gram tube of polysporin
Directions:
Mix all of the ingredients together and put in
clean jars.

FAST COOKIES, BECAUSE YOU ARE QUILTING

Ingredients: 1 box lemon cake mix

1 cup orange juice or Tang

1 1/2 C processed bran (Not cold cereal)

Directions:
Mix all together by hand in a medium size bowl, drop by teaspoon on lightly greased cookie sheet Bake 375 12 or so minutes cool on rack. Be sure and experiment with other flavors, using the orange juice and bran. Moist and delicious and possilbe good for you.

Apple Cake

Ingredients: 2 eggs 1 cup vegetable oil 2 cups white granulated sugar 2 cups flour 2 teaspoons cinnamon 2 teaspoons baking soda 1/2 teaspoon salt 1 teaspoon vanilla extract 4 cups diced, peeled apples
Directions:
Preheat oven 350 degrees. 1. Lightly grease and flour one 9 X 13 cake pan. 2. Beat vegetable oil and eggs until foamy. Add sugar, flour, cinnamon, baking soda, salt and vanilla. Mix well and stir in apples. Pour batter in pan. 3. Bake at 350 degrees for 30 to 40 minutes. Cool in pan for 10 minutes. Needs no frosting.

Swabian Onion Pie

Ingredients: Swabian Onion Cake

*(300 gr.) 1 1/8 cup wheat flour (cake flour)
*(30-40 gr.) 1 oz. yeast
*(80 gr.) 3/8 cup butter or margarine
*salt
*(250 ml) 1 cup lukewarm milk

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

*(200 gr.) 1 cup sour cream
*(200 gr.) 1 cup sweet cream
*1-2 eggs
*salt
*1 soup spoon wheat flour
*chopped onions, as many as you like (I usually use 6 medium sized ones)
*ground caraway seed

Directions:
first part of ingredients:
make a dough and let rest for at least 30 minutes.

second part of ingredients:
mix together.
Knead the dough, roll out on a greased baking sheet or pan (my baking
sheet is about 24" x 18"), put the onion topping on the dough, and bake
at (200-225°C) 420-440°F for 30-40 minutes. Eat hot, warm, or cold!

I gave the metric measurements as well. Enjoy!

Forgotten Cookies

Ingredients: 2 egg whites
2/3 c.sugar
1 C. chocolate chips
1 tsp. vanilla
(optional) some chopped nuts.

Directions:
Preheat ovent to 450*.
Beat egg whites stiff with sugar.
Add remaining ingredients and mix.
Drop by tablespoon on cookie sheets lined with foil.
Put in hot oven and IMMEDIATELY TURN OVEN OFF.
Don't open oven door till oven has cooled.

these are fun to do overnight, and open next morning..:)

Aunt Jo's Oatmeal Cookies

Ingredients: 1 1/2 c. flour
1/2 tsp. salt
1 tsp. baking powder
1 tsp. soda
2 c. brown sugar
1 C. shortening or butter
2 eggs
1 tsp. vanilla
2 C. oats
1 C. corn flakes
rest of ingredients are optional to taste
1 c. raisins or 1 c. choc chips.
1 c. nuts
combination of currents, candied orange peel and a little
coconut and some chopped pecans is good, maybe some dates

take cookies out of oven under-done and let sit a minute

Directions:
Mix together by hand. normal cream sugars and butter and add dry
Form into balls.
Roll into powdered sugar.
Press down with fork.
Bake at 350* for 8-12 minutes.

Dutch Pancake

Ingredients: 4 eggs
1/2 c. sifted flour
1/2 tsp. salt
1/2 c. milk
2 T. butter
Confectioners' sugar
Jam or Syrup

Directions:
Beat eggs. Sift flour and salt together and add
to eggs alternately with milk, to make a smooth batter.
Spread cool (not melted) butter over bottom and sides of cold frying pan.
Pour in batter and place in a hot oven (400*f),
Bake 20 to 25 minutes, reducing heat gradually to
a moderate (350*f) during baking.

Pancake should puff up at the sides and be crisp and a little brown.
Sprinkle with confectioners' sugar (and lemon/limes)
and/or syrup and/or jam.

Note: Best to use teflon 9" frypan. You can make two at once
and share, they are pretty big. You can use smaller 6" pan, but half
the batter for a 6" is not quite enough. 9" is best for full batch.

If making multiple, must make separate batches.

Kahluah Cake

Ingredients: 1 box chocolate cake mix (I prefer the milk chocolate, not Devil's Food)
1 box instant chocolate pudding mix (4 svg size)
1 cup milk
1 cup Kahluah
Cool whip
Slice almonds or chocolate sprinkles
Directions:
Bake cake as directed and let cool thoroughly

While cake is baking, mix the pudding mix, milk and Kahluah. It will be liquid-y.

Once cake is cooled (I bake in a 9x13 pan), pour pudding mix over cake and let "marinate" overnight or several hours.

When ready to serve, put Cool Whip on it and sprinkle with almonds or sprinkles.

Ingredients: 2 c. chocolate chips
1 c. corn syrup
1 c. peanut butter (crunchy)
3/4 c. oatmeal
1-2 c. chopped peanuts
Directions:
Melt and stir chocolate chips, corn syrup, and peanut butter. Stir in oatmeal and peanuts.

Press into an ungreased 9" X 13" pan. (If you wet a spoon with water it's easier to pat down the bars.) Cut into squares. (You can freeze this to firm it up quicker, but not more than 1 hour or it gets too hard!)

Oven Beef Stew

Ingredients: 2 pounds beef stew meat, trimmed
4 medium potatoes, cut into 1 inch chunks
6 medium carrots, cut into 1/2 inch chunks
1 medium onion, chopped
2 cups tomatoe juice
1 cup water
3 tablespoons quick cooking tapioca
1 teaspoon sugar
2 teaspoons salt
1/2 teaspoon black pepper
Directions:
Preheat the oven to 350 degrees F. Coat a 9" by 13" baking dish with nonstick cooking spray. In the baking dish, combine the beef, potatoes, carrots, and onion; mix well. In a large bowl, combine the remaining ingredients; mix well. Pour over the beef and vegetables. Cover tightly with aluminum foil and bake for 2 to2 1/4 hours, or until the beef and vegetables are tender.

Note: This is the perfect dish for a make ahead dinner. Just put it together, cover, and chill. Start baking it 2 1/2 to 3 hours before serving.

Put it in the oven and go quilt for awhile.

World's Best French Toast

Ingredients: 3 large eggs
1/4 cup milk
1/2 teaspoon vanilla
dash of cinnamon
2 large croissants sliced in half (or 4 smaller ones)

Directions:
Mix eggs, milk, vanilla and cinnamon thoroughly.
Soak croissants in mixture and fry as you would regular French toast. How long you leave them in the egg mixture depends on how dry or moist you prefer your French toast. These are really yummy!

Buffalo Chicken Tenders

Ingredients: 4 skinless, boneless chicken breast halves
seasoned bread crumbs
cooking oil spray

30 shakes tobasco sauce
20 shakes soy sauce
2 squirts maple syrup
2 shakes garlic salt
1 Tablespoon butter

Directions:
Cut chicken into bite size pieces. Rinse under water. Shake off excess water. Roll in seasoned bread crumbs. Brown in frying pan with cooking oil spray. Transfer to a baking dish.

While chicken is browning, melt rest of ingredients in a sauce pan until butter is melted. Stir.

Pour sauce over browned chicken. Bake 350 degrees preheated oven for 15 minutes.

Better than chicken wings - no bones!

Apple Enchiladas (From Southern Living Magazine)

Ingredients: 1 (21-oz) can apple fruit filling
6 (8 inch) flour tortillas
1 tsp ground cinnamon
1/3 C. butter or margarine
1/2 C. sugar
1/2 C. firmly packed brown sugar
1/2 C. water
Directions:
Spoon fruit filling evenly down center of each tortilla; sprinkle evenly with cinnamon. Roll up, and place, seam side down, in a lightly greased 2-quart baking dish.
Bring butter and next 3 ingredients to a boil in a medium saucepan; reduce heat, and simmer, stirring constantly, 3 minutes. Pour over enchiladas; let stand 30 minutes.
Bake at 350 degrees F. for 20 minutes.
Yield: 4-6 servings

Annie's Chicken

Crush one bag of chips and spread in 9x13. In a large bowl, mix everything but the other bag of chips. Spread in casserole and top with other bag of Doritos. Bake in a 350 degree oven for 30-45 minutes or until bubbly.

Cottage Cheese Casserole

Ingredients: 1 qt. cottage cheese
1 C. chopped walnuts
1 medium onion, chopped
5 Eggs (or you can use the equivalent of egg
substitute if you want)
5 C. Special K Cereal
1 Cube margarine melted
3 packets George Washington Seasoning*

*I have found that this is somewhat difficult to find. So, an alternate would be to use a powdered vegetable bullion, or melt the bullion cubes in your margarine when you're melting it.

Directions:
Mix together and bake in a 9 x 13 baking dish at 350 degrees for about 1 hour. Serve with a brown gravy. The best we've found is one by McCormack Shilling called Hunter. It's a mushroom gravy and simply marvelous.

Scotch Eggs

Ingredients: 8 hard-boiled eggs, shells removed
flour
2 pounds ground sausage
1 1/2 cups fresh breadcrumbs
1 tablespoon mace
1/2 teaspoon salt
1/2 teaspoon ground pepper
2 beaten eggs
Oil for deep frying
Directions:
1. Dust the hard boiled eggs with a little bit of flour and set aside.
2. Roll out the sausage meat on a flat surface with a pastry roller. In a shallow dish, mix the breadcrumbs with the mace, salt & pepper.
3. Take each hard-boiled egg and dip it into the beaten egg, then put it on the sausage meat and using your fingers wrap the meat over the egg until it is entirely covered. Be generous with the meat - it should be at least 1/2" thick around the egg.
4. Once the egg is covered, roll it in the breadcrumb mixture and smooth it back into shape so that it resembles an egg. When all eggs have been wrapped this way, heat the oil and deep fry the eggs until they are golden brown.
5. Allow the fried eggs to cool at room temperature for at least 2 hours before serving.

Crock-pot Stroganoff

1 can cream of mushroon soup - undiluted.

Noodles or rice

Directions:
put stew meat, and soup-undiluted into a crock pot and cook all day.
You might prefer to thicken before serving with flour or cornstarch.

Serve over noodles or rice as desired.

HINT: put your favorite bread into the bread machine and dinner will be nearly complete when you get home.
Add a salad and it's dinner. Reheats well in the microwave for lunch the next day.

BBQ Sauce

3 cups ketshup
dash of tobasco sauce

I have doubled this recipe to use for canning. Pour hot sauce into clean/hot pint canning jars. Seal with two piece canning lids, and process in boiling water bath for 20 minutes.

ZUCCHINI (Squash) BREAD!

Easy Broccoli Soup!

Simmer potato and onion in chicken broth until tender.
To this add cooked brocolli and celery soup.
Mash with a potato masher or on low with electric mixer
Add milk to get the consistency you like.
Heat through,season with salt,pepper, and dash of nutmeg.
Very flexible recipe. You could probably add cheese if you want!

DIRT CAKE

Ingredients:

You will need a clean plastic flower pot, clean silk flowers, a new garden trowel and the following:
1 large package of Oreos crushed (the white disappears)
1 cup powdered sugar
2 boxes instant French Vanilla pudding
1 package (8 oz) cream cheese
3 1/2 cups milk
1 stick oleo (or butter)
1 large container of Cool Whip.

Directions:
Blend cream cheese, oleo and powdered sugar. Set aside. Mix pudding and milk until thick. Add the cream cheese mixture to the pudding and fold in the Cool Whip. Put a layer of "dirt" (Oreos) in the pot, then a layer of pudding mixture. Keep doing this but make sure you end up with a layer of "dirt" on top. Put the flowers in the pot. If you care to, Gummy Worms are optional! Serve with the garden trowel. It's a hoot!

Savory Pork Chops

Ingredients: 4 large loin pork chops, about 1" thick
2 tablespoons all-purpose flour
1/4 teaspoon seasoned salt
1/8 teaspoon fresh ground pepper
1/4 teaspoon dry mustard powder
oil for frying
1/4 cup water
1/4 cup soy sauce
2 tablespoons ketchup
2 tablespoons orange marmalade
green onion, diced
Directions:
Mix flour, seasoned salt, pepper, and dry mustard. Coat chops on both sides with mixture.

Heat a little oil in a medium size skillet that has a lid. Brown chops well on both sides over medium heat.

Pour off excess fat and return chops to skillet. Mix water, soy sauce, ketchup and marmalade together and pour over chops.

Cover and cook slowly for 20 minutes or until chops are tender, turning once. Sprinkle with diced green onion.

Taffy Apple Salad

2 T apple cider vinegar

1 8oz container of cool whip

Mix first 4 ingredients, flour, egg, apple cider vinegar and sugar, in a small pan over low heat. Cook until thickened. Cool completely and place aside.

Crock Pot Chicken

Bake one hour, uncover; bake 30 minutes longer or until rice and hens are tender. Serves 4

Country Chicken 'N Biscuits

Ingredients: 8 slices bacon, fried crisp and crumbled
2 1/2 cups cubed cooked chicken
10 oz. frozen mixed vegetables, cooked & drained
1 cup chopped tomatoes (about 2 medium)
1 1/2 cups shredded Cheddar cheese
1 can Cream of Chicken soup
3/4 cup milk
1 1/2 cups Bisquick
2/3 cup milk
1 - 2.8 oz. can Durkee French Fried Onions
Directions:
In greased 8 x 12 baking dish, combine first four ingredients and 1 cup of the cheese. Mix soup with 3/4 cup of milk; pour over casserole. Bake at 400 uncovered for 20 minutes.

Meanwhile, combine Bisquick, 2/3 cup of milk, and half the can of fried onions; mix throughly. Remove casserole from oven, and drop biscuits by spoonfuls onto casserole to form 6 biscuits around edge of casserole. Bake an additional 15-20 minutes, or until biscuits are golden brown. Top with remaining cheese and fried onions and bake about 2-3 minutes longer until cheese melts. Makes 6 servings.

Karen's Quick Chicken in White Wine and Cream

Ingredients: Ingredients: 2 cloves of garlic, 1 medium sized onion, 8-10 oz uncooked chicken breast (or you can use cooked chicken if you want to), half a small sweet red or green pepper, 5 or 6 button mushrooms, olive oil 1-2 oz of butter, 2oz of double cream, medium to dry white wine, Tarragon and freshly ground black pepper and salt. (Serves Two) the whole thing takes about 20-30 minutes.

Directions:
Put about 2 tablespoons of olive oil and the butter in a pan and heat until butter is melted. Fry Chopped onion and chopped or crushed garlic gloves on a medium heat. Leave these in the pan while you cook the chicken breast - which you have to chop into 1-2" cubes. Just fry a few at a time and when they have gone 'white'(ie not pink) put a few more pieces in the pan until you have put them all in the pan. (If you are using cooked chicken just put it in and heat it through before continuing). Then put in the red/green pepper which you have chopped into small cubes (or you can have strips if you want). when these have been cooking for about 5 minutes add chopped mushrooms. At this stage put a good grinding of freshly ground black pepper and salt into the pan and a good pinch of fresh/dried tarragon. After one or two minutes (stirring them around so that the mushrooms get coated), put roughly 2 average wine glasses of white wine into the pan. This should just be level with everything in the pan (depending on size of pan). Let this simmer so that everything cooks and the wine evaporates off for about 10/15 minutes or so - it doesn't matter if some wine is still left this makes the sauce. Just before you are ready to serve put the double cream in stirring so that it coats everything - have this on a low heat for about 2/3 minutes. Serve with Tagliatelle or other pasta - absolutely delicious.

Quick and Easy "Pink Dessert"

Ingredients: 1 small pkg Jello (strawberry or raspberry)
1-1/4 cups boiling water
2 cups vanilla ice cream
Directions:
Pour the boiling water over the Jello. Stir to dissolve. Add ice cream and stir until ice cream is melted and well blended with jello. Pour into serving bowl or individual dessert dishes. Chill for two hours or longer to set. Serve with whipped cream on top. Makes 4-5 servings.
Note: Use regular jello. The sugar-free kind doesn't seem to turn out as well.

Carol's Quick Casserole

Ingredients: 1 beaten egg
2 packages Crescent Rolls
1 lb. cooked sausage
1 8oz. bag shredded cheddar cheese

Directions:
Spray a 9 x 13 pan with cooking spray (doesn't matter if it's butter flavored). Spread half the beaten egg in the pan. Arrange 1 package of crescent rolls in the pan, pressing the edges together. Sprinkle on the sausage then the cheese. Arrange the other package of crescent rolls on top. Spread with the remaining egg. Bake at 350' for 30 minutes.

Serve with a salad and get ready for compliments.

Use leftover ham, swiss cheese & asparagus.
Try leftover chicken, broccoli & mushrooms with mozzarella cheese.

Use your imagination with the leftovers you have in your refrigerator!

Beef Ole

Ingredients: 1 pound ground beef
1 - 1 1/2 oz. pkg dry Spaghetti sauce mix (I prefer McCormicks)
8 oz. tomato sauce
1 1/4 cups water
1 teaspoon chili powder - add more or less to taste
1 bag of Frito corn chips - the smaller chip size
Sour cream - if desired

Shredded lettuce, shredded cheddar cheese, diced onions, diced tomatoes, or whatever toppings you would normally put on tacos.

Directions:
Brown ground beef and drain well. Add chili powder and spaghetti sauce mix - stir in tomato sauce and water. Stir thoroughly, then bring to a boil and let simmer for 25 minutes.

Place a handful of corn chips on your plate, then top with meat sauce, and follow with whatever toppings you desire.

Kitty Litter Cake

Ingredients: 1 pkg. Spice cake mix
1 pkg. White cake mix
1 pkg. White sandwich cookies
Green food coloring
12 small Tootsie Rolls
1 pkg. vanilla pudding mix (not instant)
Directions:
Prepare cake mixes and bake according to directions.
Prepare pudding mix and chill until ready to assemble.

Crumble white sandwich cookies in small batches in blender. (They tend to stick, so scrape often) Set aside all but about 1/4 cup.

To the 1/4 cup cookie crumbs, add a few drops green food coloring and mix using fork. When cakes are cooled to room temp., crumble into a large bowl. Toss with half of the remaining cookie crumbs and the chilled pudding. Gently combine.

Put the mixture into a NEW, clean kitty litter box. Put three unwrapped Tootsie Rolls in a microwave-safe dish and heat until soft and pliable. Shape ends so they are no longer blunt, curving slightly. Repeat with three more Tootsie Rolls and bury in mixture. Sprinkle the other half of cookie crumbs over top; this is supposed to look like the chlorophyll in kitty litter.

Heat remaining Tootsie Rolls, three at a time, in a microwave until almost melted. Scrape them on top of cake and sprinkle with cookie crumbs. Serve with a new pooper-scooper!

A Different Apple Salad

Top of pie: 8 oz cream cheese ( may be low fat)
8 oz cool whip (ditto) 1/3 Cup peanut butter 1 Cup
powdered sugar 1 t vanilla

Directions:
Mix ingredients for bottom of pie and pour in an unbaked pie shell.
This will make 2 8 in pies or 1 10 in. pie. Bake at 350 degrees for
20 minutes or till set.
Cool
Mix ingredients for top of pie. Pour over chocolate
layer. Melt some chocolate chips and drizzle over top
if desired. Chill. VERY GOOD!

Rice Casserole for leftovers

Ingredients: 2 cups cooked meat, (ham, roast beef, chicken, etc.)
1 onion, chopped
2 T. Margarine
1 cup uncooked white rice
4 cups water
1 can Cream of Mushroom soup
Directions:
Saute onions in margarine in a large skillet. When tender add soup, rice and water, mixing well and bring to a boil, cover, reduce heat and simmer for 15 min. Add meat, mix well and pour into a greased casserole dish. Bake at 350 for 45 min. Great way to use left-over meats. Anything works well.

THE BEST CHOCOLATE CHIP COOKIES...made with jello pudding!

Ingredients: Mix and set aside:
2 1/4 c. flour
1 t. Baking soda

In a large bowl combine:
2 sticks oleo (softened)
1/4 c. sugar
3/4 c. Brown Sugar
1 pkg. INSTANT vanilla pudding (add dry)
1 t. vanilla
2 eggs
1 pkg. chocolate chips

Directions:
Mix both bowls of ing. together Bake on an ungreased pan at 350 for 8-10 min.

Peanut Butter Crinkles

Ingredients: 2 eggs, beaten well
1 cup sugar
1 cup chunky peanut butter, preferably Skippy
optional: 1/2 cup chocolate chips
Directions:
Beat eggs, stir in sugar and peanut butter. Add chocolate chips if desired.

Bake at 350 for 10 min. on ungreased baking sheet. Let cookies cool a minute or two before removing.

Makes 3 dozen.

Christmas Ribbon Jello

Ingredients: 2 packages cherry jello

1/2 cup pineapple juice
20 cut up marshmallows

1 package lemon jello

1 8 oz. package softened cream cheese

2 packages lime jello

Directions:
Dissolve 2 pkg. of cherry jello into 2.5 cups hot water. Pour into 9x13 pan and refrigerate until set.

On stove, put 1/2 cup pineapple juice and 20 cut up marshmallows in pan and stir until dissolved.

Dissolve 1 pkg. lemon jello into 1.5 cups hot water. Add pineapple mixture to lemon jello mixture. Add 8 oz.softened cream cheese to mixture. I mix the cream cheese in with a mixer.

After cherry jello layer is set, pour lemon jello mixture over it and refrigerate until set.

Dissolve 2 pkg. lime jello into 2.5 cups hot water. When cool, pour over cherry and lemon layers and refrigerate until set.

This jello is a Christmas tradition in my family. I make it every year. I make it in a glass 9x13 pan so I can see if the layers are even on my refrigerator shelf. It is very festive looking. I top it off with a dollop of cool whip. The layers really don't take long to set.

Cabbage Casserole

Ingredients: 1 head of cabbage, chopped
1 medium onion, chopped
1 pound hamburger (raw)
salt
1 can tomato soup
1 lg can (15 oz) tomato sauce

Directions:
Layer the first four ingredients (usually two times with cabbage on the top). Remember to leave the hamburger raw.

Next dollop the soup over top, then the sauce. Cover and bake at 350 degrees for about an hour and a half.

No Name Pasta

Ingredients: 2 pints heavy cream
1 pckg bacon
16 oz jar marinated artichoke hearts, drained
1 can artichoke bottoms
3 or 4 chicken breasts, grilled is best
small can blk sliced olives
1 can chicken stock
rosemary sprig
angel hair pasta
parmesan
Directions:
This is a family recipe, so there are no strict rules-- just about everything is to taste or optional! If you forget the rosemary or add the chicken stock too early-- it's still delicious!Substituting cream of chicken soup for the cream and stock can cut your prep. time to about twenty minutes.


Cook the bacon till crisp, drain off the grease and allow the bacon to cool. Mince it and set aside. In the same pan, reduce the cream till it coats the back of a wooden spoon. Add chicken stock and rosemary sprig (fresh or dry). Reduce until thickened again or you lose patience and add a BIT of cornstarch mixed with cold water to thicken it. Remove rosemary. Return the bacon, add the olives and artichoke hearts and bottoms. Cook till everything is heated through. Spoon over the cooked pasta. Slice the grilled chicken (poached is fine just not as pretty and a little less tasty) and place on top of pasta. Add as much parmesan as desired.

Nacho Cheese Soup - Fast and Yummy!

Ingredients: 1 pound lean hamburger
1 package Taco seasoning
1 box AuGratin potatoes
1 can corn
1 can chopped tomatoes and green chilies (can use
Rotel or the kind that is good for chili)
1 small package of Velvetta (or about 1/2 of a big
package, depending on how cheesy you want it)
2 cups milk
2 cups water
Directions:
Brown hamburger and drain well. Add Taco seasoning.

While hamburger is cooking, add all other ingredients
to a big soup pot. Add the hamburger and stir. Simmer until
potatoes are tender.

This soup recipe was given to me by a friend who said
she found it in a Taste of Home magazine, except the
original recipe did not have the hamburger. It is very
fast to make and it is absolutely yummy!

Chicken Lasagna

Ingredients: 9 lasagna noodles, cooked
2 cups cooked chicken, diced
2 tablespoons butter or margarine
1 medium onion, diced
1/3 pound fresh mushrooms, sliced
16 oz. canned tomatoes or plain tomato sauce
1/2 teaspoon each of basil and oregano
1/3 teaspoon each of salt and pepper
3 tablespoons butter or margarine
3 tablespoons all purpose flour
1 can (10 oz.) chicken broth
1/2 cup half & half (*see note below)
1 1/2 cups shredded mozzarella cheese
1/2 cup ricotta or cottage cheese
Directions:
Melt 2 T. butter in skillet. Saute onions until transparent. Add mushrooms, spices & S/P. Cook for a few minutes.

Crush tomatoes to break apart and add to mushroom mixture, and add the cooked chicken. Simmer on low while you make the cream sauce.

Melt 3 tablespoons of butter in a saucepan. Stir in the flour, cooking and stirring for 2-3 minutes. Add the broth, stirring until thickened. Stir in the half & half over low heat. (NOTE: I used 1% milk instead of H&H, and worked just as well).

Grease a baking dish big enough to fit 3 lasagna noodles side by side, and one that is deep enough to handle three layers of noodles, meat sauce, etc. Spoon a small amount of the cream sauce into baking dish. Place 3 noodles in bottom of pan. Add one third of the meat mixture, then a third of the cream sauce, and 1/2 cup of mozzarella. Repeat for the second layer and end with the 1/2 cup of ricotta or cottage cheese. Finish with last layer of noodles, meat sauce, cream sauce, and last 1/2 cup of mozzarella.

Bake uncovered at 350 degrees for 25-30 minutes, or until nicely browned and bubbling.

Chicken Pot Pie---EASY!!!

Ingredients: 2 or 3 cups cooked chicken, diced
2 or 3 cups mixed vegetables (frozen or canned)
2 pie crusts (I use one box of Pillsbury pie crusts found in refrigerator section of grocery)
l can cream of chicken soup
dash of salt to taste
Directions:
Preheat oven to 425 F (that's approximately 225 C for our European quilters)
Line pie dish/pan with 1 crust---do not pre-bake.
If your pie pan is 8" or "small" use 2 cups each chicken & veggies. If you are using the Deep Dish size, use 3 cups each chicken & veggies. Proportions can be varied to preference (this is not scientific)
Cook the frozen mixed veggies in large pot for about 10 minutes. Drain water, add undiluted cream of chicken soup and chicken. (I do all this in one big pot). Add this mixture to crust-lined pie dish. Put second pie crust on top, crimp edges (get creative here, girls!!!) and pierce top so steam can escape.
Bake at 425 F for about l5 to 20 minutes, or until crust is nice golden color. *** By mixing all ingredients in pot used to cook veggies, the mixture is pretty warm so brief cooking time will work.
**** Canned chicken works nicely according to my golfing girlfriend who gave this to me. I presume turkey will work well, also ****

Italian Beef

Ingredients: Crock Pot Cooking

4" sirloin tip or rump roast
1 pkg. Italian seasoning mix
4-5 peppercini's or to your taste
1 cup peppercini juice
1 cup water

Directions:
Place meat in crock pot. Sprinkle seasoning mix on top. Add peppercini's, juice and water. Cover and cook 4-5 hr. on low or 7-8hr. on high or according to your crock pot directions.

Shred or slice meat and return to juice. Great on a good crusty roll with fried onions and peppers.

Wooden Spoon Cake

Ingredients: 1 German Chocolate Cake Mix
1 can Sweetened Condensed Milk (not evaporated)
1 Jar Caramel ice cream topping (warm it just a little)
Cool Whip
3 Heath Bars ( Skor Bars work too)crumbled


Directions:
Bake cake in 9x13 pan according to box. While warm out of the oven poke holes in it with the end of a WOODEN SPOON right to the bottom. Pour 1/3 to 1/2 of the can of milk into the holes. Into the same holes, drizzle the caramel topping. Use as much as you DARE. When completely cool, spread lavishly with Cool Whip. Sprinkle with crumbles Heath or Skor Bars. Refrigerate. ENJOY!!!

Pineapple angel food cake

Ingredients:

1 20 oz can of pineapple chunks in it's own juice

1 box 1-step angel food cake mix

Directions:
Mix only those 2 ingredients together with a mixer for the time on the box. Pour into an 9"x13" UNGREASED pan and bake 350 degrees for 30-35 min. or until golden brown. Let cool.

Bisquits for Buford

Ingredients: 3 1/2 c all-purpose flour
2 c whole-wheat flour
1 c rye flour
1 c cornmeal
2 c cracked wheat (bulgar)
1/2 c non-fat dry milk powder
4 tsp salt
2 c chicken stock
1/4 oz. active dry yeast (one pckg)
1 egg
1 T milk
Directions:
Preheat oven to 300 deg. Combine, in a large bowl, the flours, cornmeal, milk powder, and salt. In a separate bowl, dissolve yeast in 1/4 c. lukewarm water and let sit for a few minutes or until it bubbles. Add the chicken stock to the yeast mixture and mix well. Add liquid to dry indredients. Knead about three minutes. The dough should be stiff. Flour a board with cornmeal and roll out the dough to a thickness of 1/4 inch. Cut out bisquits with cookie cutters in appropriate shapes (cats?) and place on ungreased cookie sheets. Mix the egg and milk and use it to brush the tops of the bisquits for an added shine. Bake for 45 minutes and cool before serving to Sir Buford!

Cowboy Cookies

Ingredients: 1 C. Brown Sugar
1 C. White Sugar
1 C. Margarine
2 Eggs

1 t. Baking Soda
1/2 t. Baking Powder
1/2 t. Salt
2 C. Flour
2 C. Rolled Oats
1 C. Semi-sweet chocolate chips
1/2 t. vanilla

Directions:
Cream margarine, sugars and eggs. Sift together and add Baking soda, baking powder, salt and flour. Add vanilla, rolled oats and chocolate chips.

Drop on ungreased cookie sheet and bake@ 350 degrees for 10-12 minutes, or until a light golden brown. Cool on rack.

Very chewy and gooood!

Shredded BBQ in Crock Pot

Ingredients: 1 - 3 pound pork roast
1 1/2 Cups catsup
1/4 Cup + 2 Tablespoons red wine vinegar
1/3 Cup brown sugar
1 Tablespoon dried onion
1/8 teaspoon garlic powder
1 teaspoon liquid smoke
Directions:
Cook roast in crock pot 8 hours on low. When done, take out and shred with fork. Put back in crock pot with sauce ingredients and cook 15 minutes. This is a nice recipe to make ahead and refrigerate or freeze, as the flavor gets better as it waits to be served. It's easy to just heat what you want. Makes a fast fix your self sandwich.

Strawberry Ribbon Mold

Ingredients: 1 lg pkg of raspberry jello
2 med bananas
1 15oz can of crushed pineapple
1 pkg frozen strawberries
1 med container of sour cream
Directions:
Prepare the jello as directed on the package. Reduce heat to low and add the frozen strawberries. Stir until thawed. Remove from heat and mix in the can of crushed pineapple. Slice bananas into the mixture. Pour half of the jello mixture in a serving bowl and chill to set. Once it's set, spread the sour cream on the top of the first layer. Pour the remaining jello mixture on the top and chill until set. Everyone thinks the sour cream is cool whip!!!
